What's For Dinner Mom?

Good morning world.

Sometimes I get into a rut when it comes to cooking, and making dinner. I am in such a rut right now. My typical response to such a thing is to pull out the cookbook..or go to some recipe sight online and start reading. The trouble is that I need simple recipes that can be thrown together quickly. My children can be picky eaters. If I make something complicated, with many ingredients, they usually turn their noses up at it before trying it. Then I get them to try it and either they spit it out or say it is good, but they don't touch another bite, claiming not to be hungry.

So, I was hoping to get some help from those who read my blog. Do you have a recipe that is simple, uses minimal ingredients, and can be prepared fairly quickly? And most importantly, do your kids eat it? If you do, please share them with me!

It would be really nice to be able to add a couple of meals into the spaghetti, hamburgers, mac and cheese, and chicken and rice rotation.

We have a Tex-Mex burrito thing that's pretty good. If you're interested in Mexican food let me know and I'll send the recipe.

We had a friend that made stuffed shells for us when our little one was born. Lots of cheese and sauce, very good.

What about homemade pizza? We buy the Boboli shells and sauce, cheese, and toppings -- it's fun for the whole family.

tacos are so easy.

also, an alternative to spaghetti is chicken fettucine. just do noodles, chicken (we even buy frozen, already cooked breasts) in (open a jar!) alfredo sauce. ten minutes! we jazz it up with extra shredded cheese to make it pretty, but it's one ALL my kids eat. that never happens!

pizza:
buy whole wheat pita rounds. (put in freezer, or they'll mold before you use them.)top individually. use jar of spaghetti sauce, cheese, and whatever each person likes. my pizza gets veggies, the kids usually just like cheese! 10 minutes at 350.
I keep the extra sauce in the fridge and do these frequently! (i like feta and parmesan cheese on mine)

Thank you for the ideas. It is reminding me of other things I haven't done in awhile.
I haven't made homemade pizza since my son requested it for his birthday dinner in March. So, about time for that one.
Nancy- I would love to know more about your recipe. I do cook Mexican food, but even with that the kids can be picky. Another take on it would be great!
HM- Chicken Fettucine is a good idea. I haven't tried that with my kids. Thanks!
Granny-I grew up eating a lot of tuna. Tuna sandwiches, tuna salad, tuna patties. I haven't made any of it for my kids. LOL I'll have to give something a try and see what they think.

scroll down to the 2nd post on March 13th. You can add more or leave out the onions or garlic. Or use cheese soup. Kids might like that better than mushrooms. It's simple...I love simple in the kitchen!!

I like getting a ham steak and frying it up with butter and brown sugar. mmmmm. The kids LOVE ham steak. I also like to serve breakfast for dinner. I bought a waffle maker and it's so quick and easy. I get the mix where all I need to add is water. My kids are very picky eaters too. We end up doing a lot of frozen pizzas and chicken tenders...
